Chocolate and Hazelnut Covered Strawberries
I am not a chef. At best, I’m an average cook. My mother always made fantastic food so she pretty much did all the cooking until I was a teenager. So, I never really got a lot of practice in the kitchen.
I also have ADHD which means I can sometimes get overwhelmed by large and complicated recipes. There are a ton of things I’d love to make, but I just don’t have the patience for them. I am learning, though, how to make healthy foods and to have fun making and eating them.
Because I’m not a chef, the recipes I share with you will be pretty simple. But they will also be fun because I think making and eating food should be that way.
So I share with you my chocolate covered strawberry recipe. They seem like an indulgent treat, but really, they’re a pretty delicious and healthy snack. I added macadamia nuts because they have the best Omega 3 to Omega 6 ratio which means they’re pretty much the healthiest nut you can eat. But if you want to substitute for a nut you like better, then go for it! The point is to enjoy your healthy foods.
Chocolate and Hazelnut Covered Strawberries
Prep: 15 minutes | Cooling time: 30 minutes
Ingredients:
1lb fresh strawberries (preferably organic)
1 3oz bar of dark chocolate (70%+ cocoa)
½ chopped macadamia nuts
Equipment:
1 towel
1 medium microwave safe bowl
1 small bowl
1 baking tray
parchment paper (recommended)
food processor (optional)
Directions:
- Wash and pat dry the strawberries.
- Cover the baking tray with parchment paper.
- If hazelnuts are whole, pulse them in a food processor so that they are the size of small pebbles. Try not to over process or they will be crumbs. If you don’t have a food processor or you just want a small fun workout, put the nuts in a plastic bag and beat the crap out of them. Place the chopped hazelnuts into the small bowl.
- Break the chocolate into squares and put them in the medium bowl. Microwave the chocolate for about a minute, stirring after 30 seconds.
- Hold the strawberries by their leaves and dip them into the bowl of chocolate. Watch out – that chocolate is hot! Be sure the bottom of the strawberries are completely covered.
- Lightly roll the chocolate- dipped strawberries in the macadamia nuts.
- Place the chocolate and macadamia nut covered strawberries carefully onto the parchment paper.
- Put those puppies in the fridge.*
- Wait at least 30 minutes before eating. Really. They’re worth the wait.
